    A tip that’s worked well for me is to let your meat come to room temp (30-40 min) before the sear. That way the meat doesn’t seize up and you get a beautiful crust. Also, put those herbs to good use! Melt some butter in the pan with the herbs and baste your steak after that initial sear. Baste baste baste. Really enjoyed your video.

      Bringing the steaks to room temp first does next to nothing for promoting a good sear. Getting a good sear is all about heat transfer to the surface of the steak and the interior temp of the steak doesn't really matter as much. What matters more, is starting with a steak that has a surface that is as dry as possible. It takes a lot more energy (and therefore time) to boil off surface water than it does to just raise the temp of the water in the steak several tens of degrees. Water retards the Maillard reaction, making it take hours rather than minutes, so you need to either dry the steak off or cook off the water before you can get a good sear.

      Thanks for the insight Jon. I’m just a home cook and it worked for me. I do dry my steaks but I will certainly try your tips the next time I make a steak.

    As a Chef, I enjoy watching people who love food cook, and show how much they care about the products they cook as well. Great Kitchen set up as well man! For your pan, run the hot water until it is screaming hot and then put the pan under water, keeps it from warping.

    Two words....cast iron.
    Most non-stick skillets/pans don't like high heat and shouldn't be used in ovens.

      Why would anyone bother to transfer the pan into the oven? Just continue cooking the steak on the pan on a lower heat.

      @@deletedleaf2688Yes I think the cost of the manufacture/transport of the foil would outweigh a bit of soap and water.
      He could at least re-use the foil a few times and then recycle it (although TBF he may not have access to recycling facilities being in the USA).

    Kiefer .. I do essentially the same but next time try this .. brush a thin layer of olive oil directly on the steak, use course sea salt instead on both sides .. but allow it to stay on the steak for 1 hour per 1". Not only does it enhance the flavor but it increases the steaks tenderness. Enjoy!
    My favorite is Ribeye steak.

    I have used the recipe for months since meeting him........it is my favorite. I live in a place that steaks bbq'd were not allowed, and thought that is the end of my steak days. This now is way better than bbq. It is the bomb.

      He's using carbon steel restaurant quality. It's as good as cast iron. You season them both the same way.

    I just want to thank you for taking your time to put these videos out. I can not good meat but you make it look so simple. My husband normally cooks the proteins and I do everything else, so this weekend I am going to try to cook a steak. Thank you

    I’m just imagining that steak served with a salad of freshly picked veg from my kitchen garden. My boys have just begged me to make this for dinner tonight so thanks a lot for the inspiration. I love it when I don’t have to come up with ideas for meals. 🌼

    The tin foil is genius and i can't believe i haven't thought of that. I'm going to use that one going forward. BTW, I met you at a meatloaf joint in Beverly Hills (can't remember for the life of me what it's called - right down the road from Rodeo on Wilshire.) you were gracious and awesome. Nice vid!!
