  • Join me in making this black forrest inspired petite gateu. This dessert is so rich it just called me poor.
    Chocolate Biscuit:
    Butter: 22g or 1.5 tbsp
    Chocolate: 95g or 2/3 cup
    Egg whites: 90g or 3 large
    Sugar: 32g or 1.4 5 tbsp
    Egg yolk: 18gor 1 large
    Chocolate Crumble:
    Flour: 80g or 2/3 cup
    Cocoa powder: 25g or 1/4 cup
    Sugar: 50g or 1/4 cup
    Salt: 2g or 1/2 tsp
    Butter: 100g or 7 tbsp
    Cherry Chocolate Mousse:
    Cream 1: 57g or 1/4 cup
    Cherry Juice: 80g or 1/3 cup
    Yolks: 36g or 2-3 yolks
    Gelatin: 2 sheets
    Chocolate: 160g or 1 cup
    Cream 2: 231g or 1 cup
    Vanilla Cream:
    Cream: 154g or 2/3 cup
    Confection sugar: 14g or 2 tbsp
    1 vanilla bean pod or 1/2 tsp vanilla extract
