How to Make Lion Dance Steamed Buns! 舞獅包子

  • These attractive yet unique “Lion Dance Steamed Buns” usually served during Chinese New Year as a symbol of good luck and prosperity.
    The buns is really soft and fluffy!
    And the thick sesame paste filling has a significant aroma and a toasty sesame flavour, not too sweet and really tasty.

    LION DANCE STEAMED BUNS
    Yield: 2 Buns
    Total Time: 4 Hours
    🌿 BLACK SESAME PASTE
    50 g Mung Beans + 500 g Water
    40 g Caster Sugar
    5 g Wheat/ Potato Starch
    1/8 tsp Salt
    20 g Vegetable Oil
    25 g Roasted Black Sesame Seeds (Crushed into powder)
    🌿 DOUGH FOR DETAILS
    150 g All-Purpose Flour
    1/6 tsp Instant Yeast
    4 g Caster Sugar
    70 g Cold Water
    6 g Shortening
    Food Gel Colouring (Black, Green, Blue, Yellow, Red)
    🌿 BUNS DOUGH
    110 g All-Purpose Flour
    1/8 tsp Instant Yeast
    3 g Caster Sugar
    50 g Cold Water
    4 g Shortening
    Red Food Colouring
    Steaming Time: Over High Heat ~ 18 Minutes (after steaming off from the heat DO NOT OPEN THE LID, let it rest in the steamer for another 3 Minutes)

    Wow, that's so beautiful and detailed. Please tell me why this recipe doesn't have baking powder like the tangerine bun recipe. Thank you for sharing the recipe.

      Thank you for your compliment and it's always been a pleasure.
      We need to work fast when making Tangerine Buns. 
White dough (with filling inside) must be immediately wrapped in orange skin dough before it starts to rise.

      In the recipe, the final proof on Tangerine Buns is only 50% of it's original size; because when I tested, if it reaches 100% or doubled in size, the orange skin will become wrinkled after steaming. So that's the reason I added some baking powder in the Tangerine Buns recipe.
      Adding baking powder can improve the gas production vitality of yeast while steaming and the whiteness of steamed buns, it makes the whole process a lot faster and easier. Only one proof is required and the result is much more consistent (ensuring the shape can be perfectly round).

    So beautiful❤️ btw, may I ask you. what did you apply on bun to put little colorful bun? Oil or water??

      I am using “Americolor Food Gel Colouring” it’s a water based.
