So, here I am, in the Catskills Mountains with my trusty iron wok bought in Chinatown, NY circa 1995 or so, roasting local farm sausage with garlic clove in the paper, hard cider and amaro. Little brown sugar, little pink Himalayan rock salt. Bit of oil. I had to look up this chef. He is 100% correct about the craft of it. Let the forest be your final flavoring. Can't beat it.
