Fantastic recipe. Love, love, love ham and potato soup. Great canning idea for a single persons pantry. I always buy nitrate free hams, lunch meats, bacon, etc . I got into that habit when cooking for my hubby. He was on kidney dialysis so I made sure we used as few preservatives as possible.
I'm going to try this today. With winter coming and long work hours and an elderly mom I want some of this on my shelf...my canner only does 4 qts at a time but I'm still excited.
I canned russets this fall. They looked great coming out of the canner. The next day it looked like I had poured elmer's glue all over them! We tried a jar. Rinsed them off well, drained and fried them. They were yummy! Just looked funny!
Canning book that came with my canner shows pork and ham 10 lbs pressure 75 min pints 90 min qts so I can ham when it is on sale during holidays and add ham to soups to be canned, also can smoked sausage when on sale

Jeni, you had me from "not USDA approved"!!! I love rebel canning recipes from people who have been canning for many years. I think that if I can buy a can of chunky campbell's soup with ham in it, then why can't I can it myself! Thank you so much for this basic recipe that I can adjust to my preference. I have "liked" it above and will refer to it often.
Well this is on for today's project!! Leftover ham from last night and got a bargain sale 2 days ago. 5 lbs of red potatoes for 99 cents!! You know I bought alot. Think I might add celery!! Thanks for the recipe Jeni!!
I am going to do this the next the I have a leftover ham. I always struggle with what to do with the leftovers. Sometimes I will make a boiled dinner and add cabbage, potatoes, onions and carrots and sometimes turnip. But that gets old. This will be something I can do and later and pull a jar out and have soup. Yum! Thanks!
Your recipe sounds awesome, gonna try it....the only thing that I can see wrong with it is, that the USDA doesn't give times for 1/2 gallon jars, bummer.....soo glad you're doing well after your surgery❤

Got this Potato Ham Soup and The Beef Stew in my big American Canner. As you can see my canners are old but perfect. Thanks for the recipes. Oops cant see where to load the photo but my large canner is filled with the Beef Stew in pints for the hubby. And my smaller is filled with Potato Ham soup for me and our daughter !!
Jeni, I just wanted to tell you thank you for this fabulous recipe. I had xrays today, worn out from 30 days of unremitting pain, and not happy to hear I need to stay off one leg completely for 4 months! (Stress fracture, ugh!). This was my lunch and dinner and was just perfect! I added a T of potato flakes, a half cup of cream, some parsley and it was PERFECT! I may be unable to can for a while, but this makes a simple comfort meal fit for anyone in pain! Thank you for this fabulous canning recipe!
I once had a chicken, potato and broccoli soup that was amazing, but could never find a recipe. This might be a way to figure it out. Yum, yum! Doing ham and potatoes too.
This looks so good. I think the biggest problem with going by what the USDA says about canning is that if they haven't had the resources to test things they say don't do it till they can test things. I have had no problem canning ham or many other things they don't recommend. Thanks for this video it sure gives me ideas for other things to can.
I completely agree with you on the USDA! I always have to put in a disclaimer or some will get upset. I’m a known rebel!! I have never had any issues either. 😊

I am adding this to my every growing list of stuff to can. I don't have time for a job I need to be home canning ha ha. Thanks for sharing another great recipe!

I never canned with russets. I have heard that they turn too starchy & mushy but I see in your video that they hold up pretty darn good. Thanks for posting 😃

How much pressure you need to use goes by your altitude only, it NOTp per recipe of per product!!

I made potato soup 3 days ago. We use garlic, onions and bacon bits with heavy cream. This is a great alternative. 👍❤️
