      The silicone cheese cake protector can be more than just one use. It could be used a a jello mold, since it can go in the oven it could be baked in, I'm sure other options are possible too. ❤ Enjoy your content.💐

    Your silicone bowl could come in handy if you need to transport a glass or ceramic dish to a friend's house. It will protect the dish and stop it sliding around.

    When letting a cheesecake cool in the oven, make sure to crack the oven, don’t leave it closed. It will overcook!

      not so much overcooking in a waterbath; although 1 hour 40 minutes is a little excessive, but hey, I’m sure it came out delicious! The recipe did say to open the oven door.

    300 for 1 hour turn oven off let sit in over 1 hour.comes out prefect.😊

      Just to add to the choir. I've made many different cheesecakes over the years, and early on, gave up the water baths with no deterioration in outcome. Maybe there is a very delicate type out there for which a water bath would be necessary, but I haven't found it thus far. 😊

    I save all of my cake trimmings in the freezer and when I have enough I make a trifle with whipped cream and broken up chocolate bars

      I absolutely love that idea. For me the top usually gets ate as the baking tax lol
      Maybe with the leftover icing and/or ice cream when the cake is finished. :D

      That is how I use the edges of the brownies than people prefer not to eat compared to the softer insides. The pudding and whipped cream softens them wonderfully!

    Hi Becky! As a cake decorator, I just had to comment on how good your cakes look! You've come a long way- they do look very professional!Definitely going to try your chocolate cheesecake recipe! Cake carriers or cake boxes make transport easier! Local craft stores or cake and candy supply shops) sell boxes by "each". If you get a cake cardboard at least 1/2" larger and a cake box of the same size, it's MUCH easier to transport, protects the whole cake from sliding into the side of the box, and looks more professional.- Just a tip in case you find yourself transporting many more of those decadent cakes!

    For a less expensive alternative, wrap your pan in a crock pot liner before wrapping in foil. No more wet crusts.

    I went to Wilton enterprise’s and learned from Wesley Wilton to cake decorate. I had a very prosperous business after that. It was a fantastic experience. Your cake looks beautiful!!!

    hey Becky! to make the curls, start at the bottom of the chocolate edge and go up all the way the width to the end. just maybe d1 1/2 to 2 inches at a time(wide scraps). hope that makes sense

    just a little tip from my Mom about room temp eggs, you can get warm water - not too hot - and warm them up in about 5 min if you forget to pull them out of the fridge.

    This must be annual chocolate day - who knew? I watched your vlog as I made a chocolate hazelnut ice box cake today for a family get-together tomorrow. It is going to taste fantastic (I licked the beaters so I know) even if it doesn't set up enough for slicing. It is very decadent and very expensive but it will be a treat even if we have to pretend it is a trifle and eat it out of a bowl with a spoon. I normally avoid chocolate because it gives me headaches but I will take meds because I am determined to eat this particular dessert. Your friend is going to be blown away by your desserts.

    Hey Becky, great recipes as always. I would suggest that if you’re trying to be more consistent in weighing your ingredients, you get better results when you don’t mix ounces, cups and grams in one recipe. Just stick to one unit of measurements. Best wishes from London, England.

      Completely agree! After many years of baking using cups, I switched to grams and it's made such a difference. I also love that I don't have to dirty measuring cups/spoons with the scale method.

    I loved all these recipes! A good trick if you’re not sure your pan is thick enough not to burn delicate recipes like caramel is to put a cast iron pan under your cooking pan. The cast iron helps disperse the heat more evenly.

    Hi there! I’m a fan! Add parchment paper to the bottom of your cheesecake pan and lock the outside rim of the cheesecake! Cut the excess of the parchment by an inch from the edge of the cheesecake pan! The parchment paper will allow for an easy release from the cheesecake pan and the actual cheesecake! “A COMPLETE GAME CHANGER” AS YOU WOULD SAY!😊 Everything looked amazing and yummy!🙌🏾🤩

    Oh my goodness those look so amazing! I had a friend when I was younger and her and her siblings threw their Mom an “everything chocolate” party when she celebrated 10 years’ remission from breast cancer. I always thought that was such a unique theme! And delicious! They had a chocolate fountain and all kinds of cakes and treats like what you have here. Thanks for sharing!

    I make my cheesecakes in advance so I can freeze them. I also baked with parchment in the pan. Once frozen you can take it right off the bottom of the springform pan then pull off the parchment and place on a beautiful serving dish and the. Top if needed. I make a German chocolate cheesecake at Christmas and this is how I do it before I make the coconut pecan frosting for the top. Mmmmmmmm! So yummy and pretty. The crust is the absolute best part. Chocolate grahams and sugar crust. Your desserts turned out beautiful!

    Baking, unlike cooking, is an exact science and needs precise measurements, with the right measuring tools. It is actually chemistry. There is a difference in a dry cup verses a liquid cup. When a recipe calls for 1 cup of milk, you must not use a dry cup measurement. Most dry ingredients, like flour, powered sugar, and cocoa should be shifted before measured and leveled off. Dry ingredients compress as they set in their containers. It is also good to sift all your dry ingredients together. Spoon measurements should also be leveled off and measured with the correct spoons. You stated that your baking has become better since you have been using a scale. You might do an experiment of sifting and then measuring and leveling with the correct tool and then weighing it and see if you get the correct grams. Hope this helps!

      As a European, I'm continually baffled by why Americans don't just weigh ingredients. Which makes all this fuss over measurement unnecessary.
      How much weight you get of an ingredient for a given volume is dependent upon the density of the ingredient (as Becky mentions). So @aquiltingmama is correct that wet and dry cups mean different weights.
      I think not ALL baking absolutely MUST be exact science, that if you want to be more sure success it's better to follow tested recipes.
      I don't think people should be scared. Just be prepared for some variation.
      But weighing is much easier to be precise as Becky herself often does.

      Just weigh and all will be well... No fluffing necessary. Flour no longer needs to be sifted as it is consistently unclumped these days. (Although I do still sift confectioner sugar almost always as it can still be clumpy.)

      A liquid cup is no different than a dry cup. It is just easier to get an accurate measure due to the way water behaves with surface tension. A liquid measuring cup allows you to see the meniscus (the lowest point of the curve of water). In a dry measuring cup, the liquid can rise over the rim of the cup and, therefore, is a greater measurement. This is not always such a big deal in baking, but can lead to inconsistent results.

    Oh no! The best part is when you and Josh taste test and your beautiful eyes tell us how good it is. Question: was the caramel layers hard to cut thru? I would be afraid it might squish the tender layers of cake. Im not a huge chocolate dessert fan, but these are gorgeous!! Did little man like his cheesecake mini?

    Becky, here is a cake layer leveling tip that I learned when I was a baker- to level the cake layers, slice off the dome of the layer (like you did) then turn the dome side around 180 degrees so that the dome is now on the opposite side of the layer and reassemble. No fuss and no waste.

      I always put a plate on top of the cake layers while they are still in the pans cooling. No dome to cut off and you can cut your cake in half no problem!

    Hey Becky! Greetings from Germany! I really really love watching your videos! When you pronounced "Kirsch" it was very good! I, as a native speaker didn't notice a mistake when you said it! ☺👍
    What you did was a pretty modern interpretation of a "Schwarzwälder Kirschtorte" and had very little of a traditional one but it sure does look tasty and amazing like all your cakes did! I think I have to try this recipe the next opportunity I have!

    I have always been impressed by how both you and your mother are able to pour the batter into two cake pans and get the same amount in each one! I seemed to get one bigger than the other all the time. Now I use my scale and find it a game changer for someone without your talent for even pouring.

    Becky. I have never been a baker (my grandma was an excellent baker), whereas I am better at cooking. However, after binging your videos, I thought heck Ill try to make the dinner rolls.. and they turned out FANTASTIC! soft, pillowy, and light and so easy. Thank you! We are going to enjoy them tonight as pot roast sliders, with swiss, garlic aioli, and caramelized onions.

    Hi Becky. First: A+ pronunciation for "Kirsch".😊 My mum uses to cook cherryjam like this. Just in case she spontaniously wants to bake a Schwarzwälderkirschtorte, or something similar. The Kirsch adds an earthy, heavy note and banalces the sweetness perfect. And it's fabulous on a sandwich. 😉

    To cut off the top of the cake you can also use toothpicks as a guide at the desired height and then wind a thin thread around the cake and pull it through. This is also helpful if you only bake one cake and you want to divide it into several layers.

      My mother used to use the toothpicks but then a long bread knife worked well just using the toothpicks as a guide around the edges so the knife doesn't dip or rise by mistake.

    An easy way to level your cake is to use your bread knife or unflavored dental floss before turning it out of the pan. I learned this from a friend who was a professional cake decorator. Those desserts look absolutely amazing!
