Veggie paaji north Karnataka flavours are spicy, vibrant and full of flavours. Its no where subtle or dull. And also you're eating North Karnataka food sitting in Bengaluru 😅. Come to Hubli if you really want to taste authentic North Karnataka cuisine.
Black chutney powder is nigella seeds ( prominently used in the sabjis to enhance the flavor it gives earthy taste). And the authentic food usually has more hotness because green chilli is used. It's subtle where you are eating because less spice is eaten in South part of karnataka).

@Tanmay the restaurant has toned down the spiceness of the food to the extent that local Bengalurian or south Karnataka ppl or people from anywhere cant handle that amount of spice n enjoy the flavours(thats other thing they feel little spicy yet) But the actual thing is North (uttara) Karnataka food (Vegetarian) --- Spiciest!.. @@rojaachar very true...I have seen all his Bengaluru food videos in this series, the Bengaluru guides don't seem to have good exposure of the food of Karnataka and saying in every video that Karnataka food is sweet giving wrong conception to the host. It would have been very great if he had Kripal Ammanna for the whole series, he could have given Veggie Paaji a greater idea on the flavour profile.
Another superb content created as usual by my favourite foodie blogger @VeggiePaaji 👋👋Mouth-watering, tempting and delicious foodie vlog 👍👍 Lots of love and blessings to you Tanmay and Family 🙌🙌 ❤❤❤
Come and eat this in Hubli, it's not at all subtle. The flavors of North Karnataka are rich and vibrant. They tone it down in Bengaluru restaurants to suit the local palette
Its a common misconception that Karnataka food is sweet or too subtle in flavours. Only vegetarians(usually from south of Karnataka and coastal) prefer sweetish food. Usually North Karnataka vegetarian food is very spicy (even non-vegetarians like me find hard to tolerate) so they tone it down in restaurants. Most of the Karnataka food is usually opposite to the conception/what you might have tried, its spicy and flavourful. I do get that you are vegetarian and might have not tried non veg food of Karnataka which is usually spicy in nature.
Exactly and the kind of people representing Bangalore food (except Kripal Sir) are a joke, they are just agreeing to what this guy is yapping. If you cant represent our culture/cuisine properly please don’t.

As North Karnataka Is very close to Maharashtra almost 90% food is similar
Earlier Maharashtra was a part of mysuru, that's why Maharashtrians copied our food culture. North Karnataka is not very close but Maharashtra is!
