Re rings sticking to the sides: i think it’s inevitable but one thing that would make it easier to manage would be to use a silicone spatula rather than a wooden spoon you stir - it’s much more efficient.
Man I was just recently thinking about trying to make a french onion Mac and cheese but this looks better. So glad I’m not going to have to come up with it on my own.
I wonder if the issue with the sticking pasta would’ve been resolved by using a deep-dish enameled cast-iron instead of an uncoated iron pan so the pasta could slide back down better (or at least not end up at the top of the pan because the sides of the pot are higher). I do like one person’s suggestion of using the silicone spatula too.
