I'm jealous too - have preordered the Game. Saw many of your Let's Plays for Pathfinder Kingmaker. The most were superb... And I'm waiting for 25th September ....
I enjoyed this a lot. I really liked being able to see literally everything about each class, which you did a good job of showing. The one thing you missed showing, which I'd like to see, is the options for advanced weapon training. It looked like when you get the second level of weapon training, instead of selecting a new group of weapons, you can select an advanced option to do something new with the old group of weapons. But the tooltip didn't show the list of options for that, which I'd like to see.
Good job on these. This is the most interesting stuff for those of us who are trying to avoid too many spoilers and so don't watch your playthrough.
I'd like to see cleric, which archetypes and divinities are available
"Let's go to the basics of what they do" **Jumps to mid-level** I assume the WPDS = Weapon Proficiency Deft Strike which allows the Aldori Defender to use his dexterity for damage with a dueling sword.

Wizard is the most iconic in fantasy. Fighter is the most generic.
wow the aldori defender is garbage. Ill go a normal fighter then use those three 'lost' feats to gain exotic weapon dueling swords, weapon finesse, and two weapon weilding, then gain two (or four) levels of rogue and full plate armor with a max dex bonus of +7 (24 dex) , weapon focus, weapon spec, etc etc and blow the aldori defnder out of the water with a standing AC of 36-40 (max 45 with only +3 items and expertise on)...
basically if the rule are the same ac 36-40 (max 45), seven attacks (if not 8), while having cha bonus to all saves and evasion (fighter 14/rogue 4/ paladin 2)
The rules are not quite the same. You'll struggle to min/max/munchkin characters in this version of the pathfinder rules, but good luck.
Spidey1958 tends to forget essentials. I think they get the Deft Strike weapon proficiency which allows for use of dexterity to damage with dueling swords making strength into a dump stat for the class. And potentially a good dip for someone dex-based.
