You basically stir the egg mixture while it's cooking to make sure that one part isn't too cooked (thus hard); when the mixture becomes thick enough and you cant stir it anymore, you tilt the pan around to cover any holes and let it sit for a but for the bottom to cook then roll it up. In this base they folded it in half then flipped it over to seal the seam after flipping.
The way this person is tossing the food in pan, not even a single piece on stove hats off. Me trying to do same not even a single piece in pan. Cooking food is art 🖼

This chef has some serious skill with that wok. You shouldn't make this dish (Omurice) in Europe. In Japan, where this dish originates from, eggs are checked very thoroughly on micro-cracks by the goverment. That way they make sure there is no Salmonella in it. In Europe or America that isnt checked, so you need to cook your eggs longer to kill the bacteria. Im afraid this dish isnt possible here without risking getting very ill.
