These look amazing! I'm printing out the recipe now. One thing I've learned with hydrating raisins for my bread pudding - use hot tea. I like using Earl Grey. It adds a richness that you won't get with water.
In Oz, we call this "Sticky Date Pudding". Before the 50's the bulk of the Australian population was of British decent so I guess that's how/why we love it here. It's a ripper desert Charlie and one you'll find on the menu even at "high end" restaurants. Delicious mate... Merry Christmas!
I baked this recipe Tuesday night to share at the office for a self-proclaimed "Sticky Toffee Pudding Day". I prepped the ingredients Monday evening, pulled out the butter Tuesday morning to soften and soaked the chopped dates in boiling water to soften while I was at work. Prepped the pans: (2) 24-cavity mini muffin tins and a small cake pan. Made the batter, used a mini scoop to fill the mini muffin tins (2/3 full) and poured the remaining batter in the cake pan. Baked the mini muffins for 13 mins 30 seconds, baked the cake for 30 mins. Flipped the pan of slightly cooled mini muffins onto a sheet pan, - note, they all easily slipped out of the pan due to the butter/flour prep. Applied the sauce with a silicon brush to the bottom and sides, then flipped them over to apply sauce on top. For the small cake, I removed from the pan, brushed sauce on the bottom of a new pan and on the bottom and sides of the cake, flipped it into the new pan and poured sauce on top and down the sides - will cover after fully cooled. As I made a double catch of sauce, I had two small squeeze bottles of extra sauce - will use a small crockpot filled with water to keep them warm at the office. Made some unsweetened whipped cream to serve with the mini sticky toffee pudding. Okay, did I say this sweet treat is fantastic - well it is.. moist, sweet, saucy… thankfully I made small ones so everyone at the office can sample it today. My wife made this a couple of years ago & it is evil 😋 however if you could put your hands on some Saudi or Iraqi dates, particularly the kalas, then the difference is amazing. A friend sent me some but I don’t know why they’re not imported to Europe or the States. Also try it with barley malt, it’s such a pleasant flavor syrup

i don't usually make sweet recipes, but this video inspired me to start looking up muffin recipes. Maybe we could see some raisin muffin or banana nut muffins on the channel?
I never knew what this was until earlier this year when a friend asked me if I knew of a recipe for this. Well, now I do!! Thanks, Charlie - I even have Medjool dates and black treacle on hand.
You can make your own brown sugar with molasses and white sugar. Just mix it in. It takes a lot less molasses to make brown sugar from white than you'd expect, so start with a very small amount, mix thoroughly, add more if necessary. Really, a small spoonful will brown a lot of white sugar darker than you'd expect.
Yes, it freezes well. Let it defrost, then reheat gently, either in the microwave or in a low oven, or using the reheat option on your air fryer if it has one - I'd put it in for about 5 minutes then check the temperature. You don't really want the sponge to be too hot, since the toffee sauce will be hot. Hope this helps.
