  • *Rosemary style Rack of Ribs on the Fireside Grill
    * 1 rack of Ribs
    *To season
    * 1 tsp paprika
    * 1 tsp ground cinnamon
    * 1 tsp salt and pepper
    * 1 tbs dry thyme
    * 1 tbs garlic minced or powder
    * hot pepper optional
    * 1 tbs culantro/shadow benni blended
    * 1 tbs celery blended
    * 1 tbs brown sugar optional
    *massage into meat and let sit 20-30 minutes.
    * Place in baking pan in oven at 350o for 1 1/2 hrs to 2 hrs pending thickness of Ribs.
    * When tender and finished, pour out excess juice into sauce pan and cook down to a thick consistency.
    * Add rosemary, garlic, salt & pepper and thyme for a basting sauce.
    * grill over hot coals or fire to char add grilling sauce.
    * You can add your favorite sauce also
    * Let sit 5-10 minutes before cut and serving
