Beautiful looking meal, Donal! I would cook down the sauce a bit more on the stove to make it thicker and coat the chicken better. The salad would be prettier with matchsticked carrots and definitely needs mint. Some fried shallots would take it over the top. :) I love that you used your mortar and pestle for the peanuts...that's what my mom made me use to crush our roasted peanuts growing up.

I hate to be that person but we Vietnamese usually eat this dish with rice and chopsticks (if you can’t use them, that’s fine). And the meal usually ends with some kind of soup. Good job with the caramelized chicken though (it looks exactly like the chicken that my mom makes).

i'm sure your dish is tasty - it also seems unlikely to be Vietnamese. The closest approximation to your dish is something called (Ga Nuong) - and that requires grilling, and is far far drier. maybe call it lemongrass and herb chicken inspired by Vietnamese cooking or something similar? Certainly haven't seen anything quite so sticky in Vietnam. That dish is closer to Cantonese cooking.
maybe not as sticky but ingredient wise, it's pretty close to a dish my mom cooks. I'd say he did a pretty good job. (am from canto-vietnamese descent)
What do you do that does not include animal products of eggs, meat cheese and butter, some outstanding vegetarian recipes or plant based recipes would be great. Offering up this same recipe without meat and using maybe seared tofu might be an alterative.

More specifically the southern version of the dish as they don't use the caramel sauce in the north ( northern people don't like their food sweet).

I’m Vietnamese and there is such a dish. It’s one of favourite but I make on the stove rather than the oven and served with just Asian greens.
