উপকরণ:-
75 গ্রাম পোস্ত
6 টি কাঁচা লঙ্কা
স্বাদ মতো নুন
4 টেবিল চামচ সরষের তেল
200 গ্রাম পটল
1/5 চা চামচ হলুদ
রান্নার নির্দেশ সমূহ-
1)পটলের খোসা ছাড়িয়ে নুন হলুদ মাখিয়ে তেলে ভেজে নিতে হবে। পটল ভাজার সময় যা হলুদ দিতে হবে, তরকারি তে আর হলুদ দেওয়া হয় না।
2)পোস্ত ও কাঁচা লঙ্কা একসাথে বেটে নেবে।
3)পটল ভাজা হয়ে গেলে অল্প কালো জিরে ফোড়ন দিতে হবে। ফোড়ন থেকে গন্ধ বের হলে পোস্ত ও কাঁচা লঙ্কা বাটা দিয়ে ভালো করে নেড়ে ½ কাপ জল দিতে হবে। এবার নুন স্বাদ মতো দিয়ে পটল একটু সিদ্ধ হতে দিতে হবে। ফুটে ঘন হয়ে এলে ওপর থেকে সরষের তেল ছড়িয়ে নেড়ে নামিয়ে নিতে হবে। তৈরী আজকের পটল পোস্ত।
