Leek and sweet potato soup with thyme

  • Leeks and sweet potatoes sauteed with garlic, chicken broth added, then simmered for about 30 minutes and blended with an immersion blender.
    3 good sized leeks
    3 sweet potatoes
    8 cloves of garlic
    6 sprigs of thyme
    3 large bay leaves
    64 oz chicken broth
    No salt
    Immersion blender for the end.
