There's a mod called infinity cave that makes caves basically infinite and has a whole new difficulty system basically making them harder the longer your down there. It has special mobs and special mechanics that make the caving experience harder and more unique. Not sure what versions it's available for though

there is also another mod to make mobs more difficult call "hordes" this mod adds zombie invasions and if you ever get hit by a zombie you will become infected, however that is configurable. the cure to the infection is a golden apple, but you can also configure the cure to be any consumable item.
Majrusz's Progressive Difficulty is EXACTLY what you want for your progressive difficulty like Terraria. Enhanced Celestials will also add the blood moons you're looking for.
I would absolutely love to see more survival & especially hardcore stuff from you! As a builder myself I know how drastically different building is in survival vs creative. Survival builds take a whole other level of finesse & patience.

The mod "Nyf's Spiders" makes spiders in particular a lot more capable and aggressive. Its not an overhaul in any way, it simply gives them proper wall-crawling ability to get around obstacles better. Theyll be able to climb on ceilings and walls with great animations rather than just levitating up a wall like they normally do. It also looks super creepy. I recommend looking up some gameplay of it. The mods currently available up to 1.20.4 on Fabric and Neoforge (whatever the heck neoforge is...) and 1.20.1 on forge but all versions will probably get updated soon

7:35 Lycanites Mobs, it might be not what you are looking for, but it makes game harder, or Infernal Mobs that makes mobs enchanted, mobs get an upgrade, for example zombie that can set player on fire, or have 50% damage resistance, its for forge and neoforge, but for fabric Eldritch Mobs is a good substitute

Majrusz progressive difficulty is a great mod for additional difficulty to mobs. Blood moons and mob scaling! Gets harder once you go to the nether, and again once you kill the ender dragon. Its compatible with your better adventures modpack on CurseForge. I've been back into minecraft because of your videos!
Hey flowstate. I have some mods that could interest you for making the game harder or just different. There's a mod called levelz if I remember correctly that adds skills point to your game and with your XP you can upgrade your skills like mining killing mobs etc. And it makes progress at the start of the game a little bit different. There's also a mod that makes blood moons and different types of moons. It's called the harvest moon if I remember correctly. I think you know it but the mod when dungeon arise adds really cools structures and dungeons with really hard mobs and boses that are vanilla friendly and there's really good loot too. And finally there's a mod that makes mobs being progressively more difficult as you advance in the game. I don't remember the name but if you searched for something like that I think you'll find it. if you really don't want to deal with phantoms, just getting into bed and getting out before you skip the night is enough to make them stop spawnwing. up to you if you wanna do that
2 mods that adds difficulty similar to what you were thinking of: Enhanced Celestials, and Improved Mobs. If Improved Mobs sounds too difficult/unfair to you when you read its description, I recommend using Mobs Attempt Parkour instead so they are still at least a little harder.
Zombies reworked is a good difficulty mod, give them things like shield and flint and steel they can use. You could also consider Majrusz’ progressive difficulty mod if you want the mobs to get stronger as you progress

Regarding the food thing, I think it would be cool to have a sanity thing, where if you eat too much of the same food in a row, your sanity goes lower and lower and the amount of hearts you gain goes lower and lower as well.
Difficulty Mods (I don't know if they're all for fabric or paper since I mainly use forge (bc of quark) but the majority should be for at least forge/fabric): -Enhanced AI: Configurable AI changes that make monsters have more interesting AI allowing zombies to mine and build, skeletons have better accuracy and can shoot further, creepers can explode walls to let other mobs get to you, and spiders shoot webs. (Everything can be enabled, disabled, or changed. (I found this mod to cause quite a bit of lag since it adds a ton to the AI of mobs every tick but my machine is much less powerful than yours so you'll probably have a better time.) -Thin Air: You start "drowning" when underneath y0 and above y128. There's an air bladder that you can craft to temporarily recover your breath. Water breathing potions are the late game/mid game solution. This makes looking for diamonds more interesting and a risk/reward scenario. -Spelunkery: One of my favorites that makes the mining/tool progression more interesting (works beautifully with thin air) by rewarding you with more raw ore drops from deepslate ores and makes you have to polish gems like diamonds, emeralds, lapis, etc on a grindstone to use them. Diamonds and emeralds require a diamond grindstone which is made with rough diamonds and needs to be repaired now and then with diamonds. It adds a whole lot more than just those things but that's what I install it for. -Truly Treasures: Removes mending and other treasure enchantments from villager pools and requires you to get them from their other means or through wandering trader. -Villager Comforts (Don't know when this was last updated): Requires you to have space for villagers. Locking them up in villager trading halls makes their prices super high so it incentivizes actual village making. -Hostile Villages: This mod makes every village ruined and full of monsters by default. Everything in it is configurable including the monsters that spawn in villages (The defaults are interesting to say the least but not really all that immersive so it requires some tinkering). For maximum difficulty, keep it at 100% villages are ruined but for something more fun, I'd say make it about 9 in 10 or 8 in 10 are ruined and change the mobs to various illager variants and/or zombies for immersion purposes. This basically takes the overpowered-ness of villages out of the early game unless you get lucky. -Harder Natural Regen: There's plenty mods like this one that slow your health regen when you're fully saturated to be closer to Bedrock's speed which is much slower. This makes regen and instant health potions more valuable than a piece of steak (as they should be) and makes combat more intense. Cave Spider Spawn: Makes Cave Spiders sometimes spawn in place of regular spiders underground. Cave Spelunking: This one is a personal choice since it makes ores only generate in caves, completely removing any ores that aren't generated in a cave or next to air (you can still find iron in mountains). I personally love this since it makes caving the only way to get ores thus making the game more difficult (especially with Thin Air). It Takes A Pillage: This one is not specifically for difficulty but it replaces Iron Golems in villages with Clay Golems who are much weaker and adds new illager variants and structures. I recommend pairing with Guard Villagers to offset the huge power loss in villages by a bit and to make raids more of a team effort between you and the villagers and not just you having to kill everything while everybody cowers in fear. For your issues with food, use Farmer's Delight. One of my favorite mods that makes farming an integral part of your gameplay and allows you to cook dishes with different effects. For fabric, look for Famer's Delight Refabricated. These are the main mods I use and consider when trying to make the game more challenging. I'd love to hear other people's mod suggestions in the replies!

I would recommend the royal variants mod for 1.20.1 it adds a buffed zombie that can knight other zombies, a buffed skeleton with a more powerful bow, and a buffed creeper with a more powerful blast that has a poison fallout effect around it.
I think you might enjoy a game inspired by Minecraft called "Vintage Story." It makes you put a lot more effort into survival, and it's genuinely quite challenging & beautiful!
Moonlight lib gives effects and there is a progressive difficulty mod that adds Terraria's goblin invasion with mc mobs replacing them. You can install some mods that make mobs smarter and harder. Better Than Wolves is a modpack you should definitely try out because it's so unique. You can't really compare Mc mods to Terraria, since the content in T is so good. You can add Overhauled caves and Volcanic caverns for harder underground exploration. Born into Chaos is definitely the best mod I'd compare to Vanilla since it adds a lot of content without completely overhauling the game. There is a bunch of dungeon based mods which include but are not limited to battle towers for a more action based gameplay. Although, some add massive structures so I'd stay away from those. Overall, I hope you see this comment and consider experimenting with some of these mods.

Flow, you could try do a series of x days for months but each month you gotta build a different house in a different biome, would be fun to see actually planned builds with mining and resource extraction with it

A bit late but if you like Terraria's blood moons there's a mod called Enhanced Celestials which adds exactly that, as well as two other moons but I have yet to see what they do

Make the game harder? How about using your Modpack and starting at level 0 with levelZ and only having 3 Hearts. That was the default setting and I've died 5 times now today on Hardcore. Its just so damn hard!

I would recommend the mod Nyf’s spiders for some added difficulty it makes them crawl around slightly more realistically and gives them better AI

That mountain range 0:35 is the consequence of mixing world gen data packs and mods, or two mods that interfere
I would recommend the royal variants mod for 1.20.1 it adds a buffed zombie that can knight other zombies, a buffed skeleton with a more powerful bow, and a buffed creeper with a more powerful blast that has a poison fallout effect around it.
I think you might enjoy a game inspired by Minecraft called "Vintage Story." It makes you put a lot more effort into survival, and it's genuinely quite challenging & beautiful!
Moonlight lib gives effects and there is a progressive difficulty mod that adds Terraria's goblin invasion with mc mobs replacing them.
You can install some mods that make mobs smarter and harder. Better Than Wolves is a modpack you should definitely try out because it's so unique.
You can't really compare Mc mods to Terraria, since the content in T is so good. You can add Overhauled caves and Volcanic caverns for harder underground exploration.
Born into Chaos is definitely the best mod I'd compare to Vanilla since it adds a lot of content without completely overhauling the game.
There is a bunch of dungeon based mods which include but are not limited to battle towers for a more action based gameplay. Although, some add massive structures so I'd stay away from those.
Overall, I hope you see this comment and consider experimenting with some of these mods.

Not sleeping would be 1000 days and nights, the equivalent to 2000 days imo

the thing you said with making things harder via invading camp, now this is a completely different game but theres a really cool sandbox game called valheim that i play that i think has super good progression, its also really pretty. maybe not your thing but its worth checking out

There is a mod called RPGDifficulty which makes mobs harder the longer you play and further you go from spawn.

A bit late but if you like Terraria's blood moons there's a mod called Enhanced Celestials which adds exactly that, as well as two other moons but I have yet to see what they do
You should play "From The Fog" known to be minecraft's scariest mod where it basically makes minecraft a whole new game adding horrer

How about using your Modpack and starting at level 0 with levelZ and only having 3 Hearts.
That was the default setting and I've died 5 times now today on Hardcore. Its just so damn hard!

You should try immersive portals mod, I’m not sure exactly what all mods are in your mod pack so it may not work but I recommend it a try it’s actually really neat

For blood moon you’ll want a mod called enhanced celestials
Better Minecraft is a rlly fun mod pack if you want to ever branch further away from vanilla Minecraft
