I don't use leeks a lot either because they're so expensive, and when mixed with other ingredients they tend to get lost. Interestingly enough I can get them for much less in Asian or Mexican markets. I don't want to mess up this recipe by skipping the leek so I'll have to plan a special trip. Looks great! I'm excited!

Fennel is an easy plant to grow. Of course you could use the bulb part but if you let it go and it flowers, harvest the flowers. Use the flowers to flavor your oil when you cook. I love the smell of fennel. It goes in my sourdough rye bread and a topping on my bagels. My daughter hates it. I think it must be like cilantro - for some people it tastes wonderful and for others it tastes like soap.
Love Fennel too. I grew one plant and now I have it everywhere. Great plant for caterpillars of the swallowtail butterflies as well. A win for the environment and me at the same time:)

I love leeks, I add them to chunky soup, don't cut them in half, cut into 2inches and add to soup about 20 mins before serving. Cheese and leek bake is delicious too, just look up leek recipes uk.

This looks like it’s going to join our winter repertoire any day now. The one thing I might change as a personal choice would be to use a few of the gnocchi (from the chiller aisle) to mash into the soup instead of buying ultra processed mashed potato in a box. I got a sense from your comment that you’re also not a fan the stuff.
Yum! I started using evaporated milk lately to replace heavy cream, which has been so expensive. It works great, tastes great, shelf stable, and inexpensive. 👍👍

I make your Lemon Chicken Orzo every other week. It's so easy but so good! Your Broccoli Cheddar soup is my second favorite. I plan on trying the tortellini soup next that you made a few weeks ago.
I made this one last week and it was DELICIOUS. One of my all time favorite soup recipes that I know I'm going to be making again as the weather cools down. :) And I have to agree with you on the texture. I was worried that maybe this would be too rich/creamy with all that gnocchi but the ratio of cream to stock makes this one a perfect texture. And while I love Panera's tomato soup, I'm going to rank this one higher 😆

Gnocchi freeze well so you can make a shedload and just get them out as needed, they cook from frozen and bob up when they're ready. Top tip - if you're going to freeze them, don't bother with the fancy ribbing because it disintegrates in the pan. I roll mine into balls.
Looks fantastic - something to try. I like your advice about potato flakes. The only use they have in my kitchen is for soup. Never use them for mashed. A recommendation - I've found the World Market brand gnocchi seems to come out very nice; at least for my taste. Many others we can get out here in Western Texas are dense and heavy.

Most people don't own a stove top cooker such as yours. When describing heat ranges such as 2,4, 6 etc. I think most people would need to hear low, medium, high etc. Great recipe

It's much easier to chop your leeks first while all the layers are still right together, then rinse under the sink in a colander to clean. It gets them cleaner AND it's easier to do both on the knife work side and the cleaning side.

To clean Leeks: Cut the half rings, rinse in a salad spinner, spin to lose the sand and dry.
I love my salad spinner too! It makes the fresh herbs last forever in the fridge.

I don't have numbers on my stove. I say 4 out of 10 to let you know a touch less than medium.
For the leeks, when I'm cutting them into small pieces, I just rinse the cut pieces in a colander to remove the dirt.

To thicken you can add more flour or use instant mashed potatoes, or a cornstarch slurry.

They both would work in this. Chicken really is the "universal" stock though and for this one I wanted it to be lighter, so I used chicken.

It's much easier to chop your leeks first while all the layers are still right together, then rinse under the sink in a colander to clean. It gets them cleaner AND it's easier to do both on the knife work side and the cleaning side.
