Nick has a general layout of the games they're going to play and they know who's going to be the guest star for that week. Other than that everything else is straight off the top of their heads.

I mean, everyone loves to diss Nick Cannon's career, but I'm sure in reality they really respect him. He has a career that 99% of artists would be lucky to have. Unlike most artists (of any genre), he gets paid every week. And he gets paid a lot. He's got multiple shows, media appearances and creative contracts. Sure, he'll never be an A-list like Kanye or Lil Wayne, but then neither will 99.999% of the people watching his show. Plus, he's hella funny enough to produce and host this show.
In the end, you've gotta respect someone who can anchor a show that gives jobs to so many talented performers who would otherwise struggle to make money off of their talents.
