Chicken mince is an ingredient needs more love. I think a lot of people try to use it as a substitute for ground beef, but it's not the same. One has to season and cook it respecting the fact that it is chicken, not beef. It needs that garlic, and definitely lemon if it's going in with tomatoes. That addition of bacon was a good idea as well. In a meat sauce for pasta, I like multiple textures. If they don't add bacon then the milk or using butter as part of the oil is very recommended.
Grego to make it even better and the mince not so lumpy have your onions garlic and tinned tomatoes etc boiling and add the mince a bit at a time and stir through until all the mince is added and simmer for 30 mins. Doing it this way avoids the mince clumping up into lumps!!
I can tell you enjoyed that by the way you nearly keeled over at the tasting.... If I were to add anything else it would be mushrooms because chicken goes well with mushrooms too. Thanks for doing what you do.

Great recipe and cooking here GregO… can’t say I’ve ever used chicken mince too much but have heard it’s fuller protein etc and this looks like a great way to utilise it - especially the way beef prices are going, although some ‘minces’ wouldn’t have too much beef innit… think I’m seeing this in Spring though. I've never been a fan of chicken mince but i do like to mix it or pork mince with with beef mince and make meat a balls < I talian accent, occasionally.
