I made Junket raspberry custard all the time when I was a kid. Loved it. Sometimes I'd drink it before it set up

Junket was a staple of my 1950s childhood. Was always intrigued by the box's description of it as 'rennet custard.'
I tried this recipe and substituted half the rose water with rose liqueur to give it a bit of a boozy taste and omg it was delicious!! My vegan friends were so happy with this, and the rest of the group couldn't tell!
My mom fed me junket custard when I was a baby. She said I especially liked the Orange and the Raspberry.
That pink agar custard is so much like my mom's signature dessert. She mixes evaporated milk with the coconut cream and adds some raisins and pineapples. But she uses the agar bar not the powder, end product has two layers. 1 layer is light sweet gelatin with the fruits, 2nd layer is the creamy decadent custard. Agar powder wont produce the layers.

I have those exact same two pages obviously including the recipe for the grape nut rennet custard in my 1976 edition of culinary arts institute encyclopedic cookbook. Need to try it!

Then, "JUNKET?!? WTH, where did that come from- you haven't had Junket since you were little at Grandma's!! What even IS that?!?" Junket Vanilla Custard was always in my home in the 1960s. I never heard of adding weird stuff like "ROSEWATER" and certainly not my favorite cereal Grape Nuts. Your retro music is really cute and appropriate!
Does anyone still eat "Junket Rennet Custard?" Being poor as children, we got donated food. My worst memories are... a sardine sandwich (which I threw out the window)... canned spinach... and Junket.

It's something that is mentioned in English Victorian cookbooks and suchlike but I've never known anybody now actually make it

I wanted to try making the junket recipe, however do you think the second cherry topping you made would work just as well with it, or is it better to stick to the original topping?
+Kristen Velasco Yes, either cherry topping would work. But if you use the modern version then I would consider not bothering with the grape nuts.

Can custard be made with almond milk using junket tablets?
Pam Baldauf- No, almond milk does not contain casein, the main protein that rennet enzymes react with. You will have to use agar agar, pectin, tapioca, or some other thickening agent instead.

Before all the vegans get all gaga over using Junket?rennet, you might wish to tell them "where" rennet is sourced from. They will be terribly saddened and disgusted once they find out. Because "where" rennet comes from is WAY WAY NOT vegan. I hate to play the Devil's advocate, it's a dirty job but someone has to do it. I do love ALL your delightful presentations though. In my book, anything retro is so hip (well, almost anything).
Dave Sandler- the Junket rennet tablets are not sourced from calf stomachs, they are vegan/vegetarian and vegetable-based. However, the rennet tablets won’t work with vegan milk because the enzyme reacts with a protein called casein, which is not present in any vegan milk, only in animal milk.
white sugar isn't vegan (bone char is used to whiten sugar). looks great otherwise though!
