    Recipe
    Ingredients:
    For the Kadhi:
    1 cup Gram Flour (Besan)
    2 cups Yogurt (whisked)
    5 cups Water
    1 tsp Turmeric Powder
    1 tsp Red Chili Powder
    1 tsp Coriander Powder
    1 tsp Cumin Seeds
    1 tsp Mustard Seeds
    1/4 tsp Fenugreek Seeds (Methi)
    2-3 Green Chilies (slit)
    1 tsp Ginger-Garlic Paste
    1/2 tsp Asafoetida (Hing)
    10-12 Curry Leaves
    2 tbsp Oil
    Salt to taste
    For the Pakoras:
    1 cup Gram Flour (Besan)
    1 medium Onion (thinly sliced)
    1 medium Potato (thinly sliced)
    1 tsp Red Chili Powder
    1 tsp Cumin Seeds
    1/2 tsp Baking Soda (optional)
    Water (to make the batter)
    Oil (for deep frying)
    Salt to taste
    Instructions:
    1. Prepare the Kadhi:
    1. In a large bowl, whisk together gram flour (besan), yogurt, and water until smooth. Ensure no lumps are present.
    2. Add turmeric powder, red chili powder, coriander powder, and salt to the yogurt mixture. Set aside.
    3. Heat oil in a large pot. Add cumin seeds, mustard seeds, and fenugreek seeds. Let them crackle.
    4. Add asafoetida, ginger-garlic paste, green chilies, and curry leaves. Sauté for a minute until fragrant.
    5. Pour the yogurt-besan mixture into the pot and bring it to a boil. Stir continuously to prevent lumps.
    6. Once it starts boiling, reduce the heat to low and let it simmer for 30-40 minutes, stirring occasionally. The kadhi should thicken and become smooth.
    2. Prepare the Pakoras:
    1. In a mixing bowl, combine gram flour (besan), onion, potato slices, red chili powder, cumin seeds, baking soda (optional), and salt.
    2. Gradually add water to form a thick batter. The consistency should be enough to coat the onions and potatoes.
    3. Heat oil in a deep pan for frying. Once the oil is hot, drop spoonfuls of the pakora batter into the oil.
    4. Fry the pakoras on medium heat until golden brown and crispy. Remove and drain on paper towels.
    3. Add Pakoras to the Kadhi:
    1. Once the pakoras are ready, add them directly into the simmering kadhi. Let them soak in the kadhi for 5-10 minutes to absorb the flavors.
    2. Adjust the seasoning as per taste and turn off the heat.
    4. Tadka (Tempering) - Optional but Recommended:
    1. For an extra flavor boost, prepare a tadka by heating 1 tbsp ghee or oil in a small pan. Add 1/2 tsp red chili powder, and immediately pour it over the kadhi.
    2. Garnish with fresh coriander leaves.
    5. Serve:
    Serve the Punjabi Kadhi Pakora hot with steamed rice or roti for a perfect meal.
