Because it has then the consistency of a syrup and it‘s sweeter. When it‘s too watery it‘s more difficulte to work with it and you can add less sugar.

I really hope that this guy was slowing it down for the camera. If he wanted to make enough to make a profit, then he'd need to start at least 8 hours earlier.
