    Was talking to one of my neighbours on the weekend who's an old Greek guy that has a few hundred trees about what he does with them as in the last few years I've been here I've never seen anyone pruning or harvesting them.
    Said he originally planted them for making oil, but that about ten years ago it started costing more than he was making, so turned the water off and just keeps a couple in good knick for pickling.
    He told me about the egg trick and also that a much faster and more dangerous way is to use lye, but with that they don't taste as good as the salt water way. Definitely keep to have a crack at it next year when they're not overripe like he said they are now.

    6% salt 600 grams per 10 litres after soaking olives for few days in fresh water

    Good morning, Tim, I wish my Nona was still with us. They are literally the salt of the earth. Just watching the video at 6am I still wanted to taste the olives.
