HI Gracie Chai, No need for santan, a lot of shallots, red onions and candlenuts (buah keras) gives a rich flavoring to the dish. The method of not adding water in the early stage of cooking allows the meat to release the juice to the gravy and at the same time the meat will absorb the flavor from the curry paste. Hi Lena Thomas, you can add more of small dried chilli but the curry maybe too spicy. If you want it less spicy can remove the chilli seeds so it can tone down the spiciness of the curry. Hi Gracie Chai, Yes, sure you can cook with chicken. However cooking time may need to reduce as chicken can become soft faster than pork. I recommend to use Ayam Kampung (free-range chicken) and the curry will turn out as delicious. Thank you.
