Trout With Creamy Spinach Sauce
Recipe out of Pam Johnson's Gulf Coast Kitchen
6 trout fillets (I used red snapper)
2-3 tbsp. butter
1 tbsp. olive oil
Fish Coating & Topping:
1/2 cup Bread Crumbs (I used parmesan seasoned bread crumbs)
1/2 tbsp. rosemary dry
1/8 cup feta cheese
1/8 cup parmesan cheese
Spinach Sauce:
1/2 stick butter
1/4 cup minced onions
1/2 cup minced green pepper
3 chopped green onions
4-5 minced garlic cloves
1/2 cup frozen chopped spinach (I used fresh Kale)
1/4 cup chardonnay
1/2 cup heavy whipping cream
Preparation:
Start with making the coating and topping. Mix bread crumbs, rosemary, feta cheese in a bowl. Melt some butter and coat each fillet with it and then dip fillet into coating mix. Once coated set aside.
Lets get the sauce started. In a frying pan, melt butter and add onions, bell pepper, green onions and sauté until vegetables are translucent. Add garlic and cook for one min. Add spinach, chardonnay and heavy whipping cream. Simmer until mixture begins to thicken. Remove from heat and set aside.
Melt butter and olive oil in a skillet over medium heat. Place fillets in once the skillet is up to medium heat. Cook approximately 3 min. per side. Once done place fillet on plate and top with the spinach sauce and Enjoy!
It's my favorite recipe as of yet. 😋
