How to BBQ pork belly slices perfectly every time

- In this short video I show how to barbecue pork belly slices. Using a simple 1/3, 1/3, 1/3 technique, shown here, this will produce perfectly cooked belly pork slices time and time again. What makes the perfect belly pork slice? For me it is crisp skin and moist, almost pulled pork stringy meat.
Use the 1/3's technique for consistent and well cooked BBQ.

This is excellent - just how I (in Aus) we would describe bbq, so came up when I searched for this exact thing which was what I was looking for. Loved your calm clear manner 👍🏻 your bbq looks just like mine 😜
Trying this technique later. For years I’ve been cooking everything directly over the coals- no wonder I’ve struggled with temp management and burning.

We've been cooking on an open flame outdoors since caveman times at a guess...
@@MrJmawiseman to be fair, we americans call indirect heat cooking, "BBQ," and everything above an open flame, "grilling."
There is also an inbetween, as with everything. This aims for 12-18" above a bed of coals, but not fire. This, around here, is called "Hill country style BBQ." And is some of the best I have had. You get both a light (but penetrative) smoke and then you get the renderings dripping into the fire, heating up, and then sticking back to the meat. Think of the way a burger or steak tastes.

Anyway. I don't disagree that even smoking (BBQ) has been done since caveman times. I once had a person from south carolina tell me they "invented," BBQ by smoking a whole pig. 😂

Hi Boris, You can cook belly pork without a lid. Just put the meat to the side of the direct heat on the grill and keep an eye on it. I wouldn't suggest wrapping in foil.

Hi +Mark Newham, sorry for the delayed response. As hot as it will go, is the easy answer. 3/4 chimney of briquettes would be my starting point with the vents wide open.

Man, the grate is extremely dirty and the black is going onto the food. Is that ok?
DiscusMagic That's not dirt, that's use. This grill has had something like 1000 cooks on it and the shiny factory effect is long gone. The grill rails are probably about half the size they were when it was new. With red hot charcoal underneath, you can quickly and easily clean up a grill if it is dirty. Use the heat and a stiff wire brush with a long handle to remove any cooking debris.
@@SimpleBBQ shiny grated means grill is not used... you are right. Plus we run the pit at high temps , it sanitizes everything . Just get rid of dust, and other particle debry ...
barbecue and grilling are two different things... for those who cook a lot and are serious about it I suggest learning the difference and change the title to "How to GRILL" not "How to BBQ"
