  • Thinking of what to serve these holidays? Bellychon, sometimes perceived as the Pinoy’s version of Porchetta, will surely be your new favorite! Try and enjoy the crispiness on the outside, yet tender, flavorful and aromatic on the inside. What a sight to look out for!
    Serves 10 to 15.
    INGREDIENTS:
    Set A:
    2 - 3 kilo thin rectangular slab pork belly, skin-on
    1 cup pineapple juice
    ¼ cup soy sauce
    1 tablespoon cracked black pepper
    Set B:
    6 stalks lemongrass, pounded and tied into knots
    6 stalks leeks, chopped
    2 heads garlic, smashed
    3 pieces red chilies
    2 tablespoons rock salt, as needed
    Set C:
    Oil, for brushing

      Pork is supposed to be 145- 150 F then let it rest for atleast 15mins

    Thank you Chef sa video. Sinubukan ko magluto. Bakit yong skin ng baboy ko matigas pero tunog crunchy naman. Tapos may portions na soft pa skin. Pero ang sarap ng meat. Tender and juicy. Hinanda namin itong new year.

    Pls clarify, you said the pork can be marinated with soy sauce and pineapple juice overnight. Then to make it crispier, rub the roll with salt and let it sit overnight in fridge. That is 2 days in fridge?

      Sorry i meant to do marinate the pork with soy and pineapple juice for an hour or so, then roll pork. wipe skin then rub with salt and chill overnight in fridge to dry skiin. Sorry for confusion.

      Tama po. Celsius po kasi gamit sa Pilipinas. So 180°C for the first 2hrs tapos gawing 200°C para ma achieve yung desired na kulay ng skin

      180 degrees Celsius for 2 Hours (to cook the insides ng roll) after that, increase the heat to 200 degrees until the skin turns Golden Brown (Tip: Brush Milk to the skin while roasting and brush oil until skin crackles)

      180°C for the first 2 hours, tapos po itaas ang temp to 200°C para ma achieve yung desired na kulay ng skin (ito po kailangan niyo lang estimate kung ok na yung kulay ng skin para sa inyo)

    Na try ko na pero di pede na 2 hours yan 3 hours minimum sa akin 2 kilos 3.5 pero dapat mga 4hours. pag 1 kilo 3 hours kasi di sya crunchy pag 2 hours

    I tried this recipe kaso medyo palpak ung gawa ko, yung skin niya nasunog kabuwisit kc yung pinagbantay ko sabi ko tignan at baka masunog gawa ng may dumating akong bisita aba yung nagbantay hinintay na mangitim ung skin bago hinaon sa oven. Hindi pa daw sunog yun gaga. Naimbyerna ako ng slight😅 pero infairness masarap at sobrang juicy! Next time hindi ko na papabantay sa iba para siguradong di masunog

    you should try not putting the soy sauce till the last 9 minutes , if you marinate it to long it makes the screen dark and un edible to eat......

      Hi chef! You mentioned that at home, you dont roll it anymore, but just lay it flat in the pan with the veggies under the pork. Question, do you include the marinade in the baking pan?
