Gluten Free and Dairy Free Baked Feta Pasta

    I tested this recipe with 3 different kinds of dairy free feta cheese: Violife, Daiya, and Good Planet. The best one for this recipe is the Daiya feta cheese! I love Violife but it melts too much when cooked.
    I had originally wanted to post this a couple years ago but didn't end up doing it and I decided to finally post it since I love this recipe and it's easy. Better late than never, right? 😉

    ⭐️ Dairy Free and Gluten Free Baked Feta Pasta ⭐️
    INGREDIENTS
    • 16 ounces cherry tomatoes
    • ¼ cup olive oil
    • 2 cloves garlic, pressed
    • 1 Tablespoon fresh thyme leaves
    • ½ teaspoon smoked salt
    • ⅛ teaspoon black pepper
    • 6.5 ounces Daiya feta cheese block*
    • 6 ounces Jovial gluten free fusilli (or other gluten free fusilli or cavatappi pasta)
    • Fresh basil and oregano, to taste (I used about 1 Tablespoon lightly dried • Italian herb mix from Gourmet Garden)
    INSTRUCTIONS
    1. Preheat oven to 400 degrees F.
    2. Add 2 cups of washed cherry tomatoes to a 9×13-inch baking pan and add the olive oil, pressed garlic, fresh thyme, smoked salt, and black pepper.
    3. Stir the tomatoes with the oil and herbs. Make a space in the pan for the dairy free feta cheese block and scoop some of the oil and herbs on top of the cheese.
    4. Bake for 30 minutes.
    5. While the tomatoes and feta are cooking, heat a pot of water and cook the gluten free pasta according to the package directions. Drain the pasta once it's cooked.
    6. When the feta and tomatoes are done, remove them from the oven and add the pasta to the pan along with the chopped basil and oregano and stir everything together.
    7. Sprinkle some more chopped basil on top of the pasta and serve.
    This is delicious with chicken sausage added for more protein.
    NOTES
    Daiya feta cheese is preferred in this recipe. Good Planet feta will work (not my favorite flavor), but Violife feta (though delicious) melts too much and just gets runny instead of making a thick sauce.
