    🛒Ingredients:
    2 chicken breast, diced
    4 cloves (tsp) garlic, minced
    1 yellow bell pepper, thinly sliced
    1 cup broccoli florets
    Fresh mushrooms
    1 tablespoon cornstarch
    2 tablespoons soy sauce
    3/4 cup chicken broth
    2 tablespoon olive oil
    4 tablespoons vegetable oil, divided
    Salt and pepper to taste
    Cooked rice, for serving
    Optional: sliced green onions and sesame seeds for garnish
    🔪Directions:
    1. In a small bowl, whisk cornstarch, soy sauce, chicken broth and olive oil. Set aside.
    2. Heat 2 tbsp of vegetable oil in a large skillet over medium-high heat. Add
    mushrooms, peppers and broccoli. Let sauté for 15 mins or until veggies are tender.
    3. Once veggies are tender, remove from pan and set into a bowl.
    4. Wipe the pan down with a napkin.
    5. Heat up 2 tbsp of vegetable oil and add thinly sliced chicken breast to the skillet. Season the chicken with salt and pepper and cook for 5-6 minutes until chicken is browned and cooked through.
    6. Add minced garlic and sauté for 30 seconds until well blended.
    7. Add in the vegetables and stir the chicken and vegetables together. Pour the sauce mixture over the chicken and vegetables in the skillet. Stir well to coat everything evenly.
    8. Cook for an additional 20 minutes on simmer or until the sauce has thickened.
    Garnish with sliced green onions and sesame seeds if desired.
