Love these little outfits. I also wanted to mention that it is not recommended to put anything with threads out for the birds because they could accidentally get the threads wrapped around their beaks,legs etc.

I'm not familiar with stretch knits. Did you choose a cotton knit or fabric blend? Does it matter?
It doesn't matter. You can also use regular cotton fabric too.
