My family are Jamaican and our family jerk recipe takes 3 days, and cinnamon is included in the marinade. He’s missing a bunch of other things too but that he wasn’t wrong about imo, it compliments the pimento so well, adds to the flavour profile
I like to add a bit of green seasoning to my jerk (which has cilantro in it). It’s a change from how I learned to make it but it’s tasty.
I’m used to cinnamon and a touch of nutmeg too.
Not just salt and black pepper, I say that every time I see these celebrity chefs cook! Preach!!
With burgers and steaks you can do just salt and pepper because the beef fat has flavor. With other meats you definitely need more than salt and pepper.
Late reply but the reason most celebrity chefs only use salt and pepper is because they are usually taught with old world cooking in mind. Using a lot of species is seen as amateurish cooking by those standards because anybody can do that. Old world, primarily French cooking prioritizes technique over over ingredients.
Chances are that if you’re making Jamaican jerk chicken, Gordon Ramsey isn’t gonna be the first person you turn to anyways.

@@javeriarehman-ux6uv someone in the comment section said that they're Jamaican and they actually use cinnamon in their jerk chicken. I can't prove if it's right or wrong but I'm sure that's possible since gully is revising a restaurant recipe whereas there can be families who actually use cinnamon in their jerk chicken.
