    I make cornbread in my madeleine pan. Thank you Southern Living cookbook for that idea! (Just Jiffy, but looks spiffy. The actress did not say that to the bishop.)

    I always assumed that the reason you need to rest the batter overnight is so that the flour can fully hydrate. Which reminds me; have you ever had canelés? They’re so good! And much easier to make than some say.

    Hey just wanted to tell you that my family is vegan, love your show and I have veganized so many of your recipes and they come out perfect! Especially the "Coq au Vin" which is a family favorite now. (I used sunchokes and chanterelles as the "coq") Going to give these a try - I remember loving them as a kid!

    Bonjour Randy and crew ! Go happy about this new recipe and now, Voilà I am stuck with another challenge which you just planted in my head LOL LOL Oh well not this week-end but the next, I will give it a go. So far I have done a few of the recipes and I am enjoying the results. thank you for sharing, you are so entertaining I am loving each one of the videos (which I do view a few times - of course).     Wow- so happy you did these. I’ve had a Madeleine pan for over a year, haven’t used it. Definitely going to make these now. Leaving the batter overnight seemed a bit of a faff... sorry, British term= hassle i.e too lazy to just get on with it...
    Just looked on King Arthur Flour online shop too. They are selling the cutest baby bunny Easter cakelette pan but won’t ship to UK... :(
    I’ll have to console myself with a batch of madeleines..tomorrow :)

    The batter needs to rest because during the resting period, starch molecules in the flour are absorbing the liquid in the batter.
    This causes them to swell and gives the batter a thicker, more viscous consistency.
    Any gluten formed during the mixing of the batter is also getting time to relax, and air bubbles are slowly working their way out.

    INever made or ate madalines. IIe found that instead of orange zest mandarin zest is very nice effect better than orange just not add as much as in the recipes.

      YES!! mandarin is delicious in this and so are other citrus fruits too!!! Like you said, you do have to play around with how much or how little you use since some citrus fruits have a stronger flavor than others!! THANK YOU so much for sharing and thanks for tuning in to DPT!!

    Made me think. Using Pam cooking spray is like using margarine. 🤦‍♀️
