  • Cinnamon syrup 1:1 (a.k.a. Donn's #4)
    ¾ Panela evaporated cane sugar
    ¾ faucet hot filtered water
    3 cinnamon sticks (broken into small pieces)
    Add ¾ C water to 2 cup Pyrex. Add the evaporated cane sugar to fill to 1½ cups. Add cinnamon pieces. Microwave water, sugar, and cinnamon until just before boil point (press 200 seconds and watch it), and stir once during the heating to dislodge any bunched sugar granules. Let mixture steep until liquid cools. Pour through fine strainer. The result is a simple (1:1 ratio) cinnamon flavored syrup. Makes enough to fill one bar squirt bottle.
