Great video! May I suggest you use the wood peel to load and launch the pizza? Works better for me. I use metal peel to take from oven to cooling rack before cutting
The results looks similar to wood fire. If you adjust the ingredients and hydration level, with practice it may be hard to the taste difference with an actual wood oven in a blind taste test or at least it should taste close
i bought it 2 months ago and it does makes great Neapolitan pizza. btw wood fire pizza brings nothing to the pizza because of the short amount of time of baking.
I like and don't like. After many years of eating mostly NY pizzas and almost none Neapolitan pizzas i wanted to try something else. i have my old oven and learned how to get great results. i also learned how to get great Neapolitan pizzas with the breville in short amount of time only to realize that i like NY style pizza much more. I think the breville is made especially for Neapolitan. Also the top heating element is very close to the low element so you can't bake anything else beside pizzas/foccacia. And about the pan i prefer pizza pan with my old oven. So overall I like the results that I'm getting with Neapolitan pizzas only and i dont think the price 800$ worth it
