Skip the marinade. You can find research on material on this online. It does nothing to chicken. Definitely not in that less amount of time. Its all just surface level. You can brine the chicken but for more than 24hrs. Only salt can penetrate Chicken's flesh. For red meats you can marinate with spices and lemon and any tenderizers for half a day or a day and it'll help. Chicken? skip it.

I followed your recipe exactly as you instructed. It came out very tasty, colour was beautiful and masaladar- perfect with hot rotis. Any moisture gets absorbed maybe because of besan. Kalonji added a unique flavour. Thank you.

Tried this today. Came out really well. Did few modifications- used desi ghee when bhunoing chicken, added a dash of kewra and pinch of sugar powder 😊

500gm chicken,
1tsp Salt,
1 tsp red chilli powder,
1/2 tsp cumin powder
1 tbspn Ginger garlic paste,
1/2 lemon squeeze
Leave it for 30 mins.
2tsp degi mirch
3tsp dhaniya (dried coriander) powder
1 tsp red chilli powder
2tsp besan
1 tsp saunf/fennel seed
3 onion (Chopped)
6 tomatoes (grated)
Whole spice
3 dried red chilli
2 green chilli
Cumin
4 cardamom
1 tsp black pepper
5-6 clove
Mustard oil for cooing.
Kasuri Methi and garam masala
