But the second verse is a different language - it sounds Gaelic but I am not sure. And the third verse is not part of hymn, but is sung in Latin. Anyone care to comment?

The 3rd verse in Angelica is not in the original Latin text from what I can gather. It appears to have been appended as a 10th verse by a German composer, Michael Praetorius, who put the chant to music and added it as part of his work. Either that or modern copies of Veni Redemptor Gentium drop several verses that Michael Praetorius still had in his works. Deo patri sit gloria ejusque soli filio cum spiritu paracleto et nunc et in perpetuum.
