Hey there - yes, you certainly can use a springform pan - but just put some aluminium foil around the bottom edge of the pan just to make sure nothing leaks... I have one of those pans, but I didn't trust it. Mind you, it's about 20 years old, and the spring has sprung...lol.
It's more like Canada's colours, but I think on Australia Day (26th January), I might make the bottom layer blue instead of red - and then we can have "The Australia Cheesecake"...lol - thanks for the idea.

(I don't know why people are nasty either - but it says more about them than me, so I don't really pay it much attention). Enjoy the recipe..
