I make these aloo tikkis quite frequently as they are quick and easy to make. You can serve it as snack or appetizer or pack it in your lunchboxes and great for picnics. You can also serve it as a side along with your main meal.
Ingredients required for making stuffed aloo tikki -
* 4 very large potatoes. I love using Yukon Gold potatoes for these but you can use any variety. Boil the potatoes till they are tender. The potatoes need to cool down completely before proceeding with the recipe. I sometimes cook the potatoes the night before and keep them in the refrigerator. I that way the potatoes become drier and easier to manage. Please mash the potatoes very well so that there are no lumps.
* 1/3 rd cup frozen/fresh green peas. if using frozen peas, allow a pot of water to come to a boil. Add the green peas to the boiling boiling along with a sprinkle of salt. Blanch them just for a minute, then drain and run under cold tap water. Please make sure you drain all that excess water.
For the potato tikkis -
* 2 heaped tablespoons cornstarch(cornflour). Can even use plain flour
* 2 teaspoons bhaja masala. Recipe for bhaja masala - • Aromatic Spice Blend T...
Please note you can skip bhaja masala or you can use chaat masala or any seasonings of your choice.
* Little less than a teaspoon of salt. Please taste the potatoes and add more according to your preference.
* freshly cracked black pepper
For the green pea filling -
* salt to taste
* 1 teaspoon bhaja masala or seasonings of your choice
* 1 fresh green chilli finely chopped
* 1 teaspoon fresh lemon juice
For frying -
* 2 tablespoons oil + 2 tablespoons butter to start with. I added 2 more tablespoons oil later as things were looking too dry.
You can serve this with any sauce of your choice or green chutney

Hello do you cooking the green peas before mashing them ?
I used frozen green peas, thawed them before using. Frozen green peas are blanched before freezing so I just mashed them up. If using fresh green peas, please blanch them in salt water for a few minutes till they turn tender.
Love this! So simple to make also. It's almost like gluten free samosa. Will canned peas also work and can you bake instead of fry?
Yes you can use canned peas. You can bake it
Would adding cheese in the centre alongside the peas be a good idea? Having the saltiness/umami flavour of meleted cheese alongside the sweetness of the peas sounds so good.

@cottagerexplorationsociety5302 with that heat when getting fried the cheese will melt but do not use too much of cheese as the cakes may burst open.
These would definitely make a wonderful vegetarian sandwich! Bumbi, do you believe that these could be fried in an air fryer? I am trying to reduce my oil intake..
I think you can. I would not dust it with cornflour but brush the surface lightly with oil and then airfry

Hi Bimbi u hav spices that r not familiar to some ppl or ppl cant get them.Some of the ingredient names in Indian are difficult for non Indian to know what it is.

Do you have to wash your hands and dirt inside nails before you dig in ? or add the dirt to elevate the taste
In India we are taught from childhood to wash our hands thoroughly with soap and water before touching any food be it before cooking or eating. So, I am very particular about that cleanliness. The question is whether you follow that rule before handling food. I doubt it because then you wouldn’t have typed in such a disgusting comment !!!!
