IG needs to make a restricted feature where you can restrict their acess to you newer posts... like a combination of blocking and restricting. It wouldnt look like you blocked them, but it stops them from being able to see all your new activity

If you want people to stop mentioning you at all, you can do that in your account settings, under privacy. However, if you only want one person to stop mentioning you, you'll have to block them.

they will. The only thing it would say if you click on their profile it will say "instagram user". It will tell them that you've blocked them and no longer can view your profile.
they can still see it from their side , the blocking only stops your connection with that user from the moment onwards, but didn't affect their side's chat history of you, the chat history is remain as long as it can unless they delete it from their side..

It says under someone's page who I do not follow and is a public figure and I occasionally look at their posts. I never comment or message them. It says you have restricted so and so and then an option to unrestrict. Did I do this by mistake? Am I the one who placed the restrict by mistake? Don't know why I would do that.

I let someone follow me but do not want then to have access to my granddaughters pictures. To many people steal pictures to scam so I retrict them.
