We give demo to client in sprint review ceremony...and planning remaining task about to perform or any kind of difficulty for next sprint is done in Retrospective ceremony.
The approach itself is not correct and even if the testing window is only one day then agile comes into play where you and dev sit together to test the scrnarios
Retrospective is not to give the demo to client .It's for the mistake we did in the current sprint which should not again come in the next sprint.

As a Tester life is very complicated to test any software with manual and automation... atleast company should hire people for only perticular role
