    Filet Mignon with a Onion Sauce
    ***What You Need***
    -Filet Mignon to your liking
    -Your Favorite Steak Seasoning
    -A couple of onions
    -Garlic Cloves
    -Rosemary
    -A little (A lot) of butter
    A Filet Mignon is one of the best cuts of beef out there. They have great texture but sometimes lack flavor. I am going to show you in this video how we do Filets every now and then to really add some flavor. Plus we love showing how versatile the grillagrills.com/ pellet grill is.
    First off we picked up two beautiful Filets from our local grocery store. We trimmed them as little as possible but they had a good amount of silver skin and fat that needed to be removed. Once they were trimmed, I brushed a light coat of Moore's Marinade to help the rub stick. I seasoned them with a good amount of black pepper and a medium coat of
    www.tnmojobbq.com/ Beef rub. The Beef rub and black pepper go great together and really bring out the flavor.
    We are going to let this steaks rest on the counter for about an hour to let the rubs work there magic. I used a cooling rack to keep the steaks out of the seasoning and seems to help get a more consistent crust and color on these filets.
    While the steaks are resting, I am going to get the Silverbac fired up. You can cook these steaks on any grill you have with great results. I just want to show that just because you have a pellet doesn't mean you can't cook a great steak. Of course, I will be using www.grillgrate.com/ in this recipe just to help with the grill marks and searing. I set the Silverbac at 485 and I know that the grates will be well above 600.
    While the grill is coming up, I am going to make the onion sauce. I took two sweet onions and removed the steam and the outer layer. I then made a small pocket in the onion where I removed the stem. I place a single beef bouillon cube and a pad of butter in each. I then put the onions, several cloves of garlic, rosemary, and several pads of butter in a small dutch oven with the lid on. I will get this in the over at 400 for about an hour. You can do the same in a small foil pack or any container you would like. You want to cook the onions down until they are really tender. Should tak about an hour.
    Now its time to get these filets cooked. This cook is as simple as it gets. I just went with the 2 minutes twist, 2 minutes flip, 2 minutes twist and check for doness. I took these filets to about 122 for a good medium rare finish. Its always a good idea to let them rest for a few minutes if you can. I add a small pad of butter to melt over them and slow down the cook process.
    While the steak are resting I worked on the onion sauce. Everything should be good and tender in the dutch oven. This makes it easy to incorporate and create a great sauce. I used a potato masher and worked the sauce to a good even consistency.
    You can serve the sauce on the side or over the steaks. The filets turned out great and the sauce just added even more flavor!

    Very good looking steak! The onion sauce is on the to do list for this weekend. It's finally going to be in the eighty's here in Middle Tennessee this week end and we can enjoy the outdoors a little more,

      Just depends on the cook. Big meats... I gotta say the outlaw stick burner or drum. Grilling... PK or Weber. Any sides or apps go on pellet. lol.

    When you sear your steaks on the grates, do you have your broiler plate on the pellet grill open to expose the flame or closed?

      No flame exposed. Standard drip pan in pan. Just running it hot and letting the grill do the work.

      Should be able to. Just as long as they are in the a little cooler than 600 degrees since you want be twisting them. Should work great!

    Question... if you set grill to 480, how are the grates going to be 600 degrees??

      The Grill Temp probe is only ready air temp above the grate so it reads 480. The temp gun is reading surface temp of the grates and the aluminum grates absorb more of the heat. If that makes since. Grill Grates make all the difference in the world.

      Usually just on a warm plate with a little foil covering it is good enough. You can pre heat the plate with hot water from the faucet and it works great.

    if you cooked steak exactly the same way using Weber kettle and charcoal instead ..do you think you could tell the difference in taste?

      Honestly, most likely on a hot and fast cook it would be hard to taste the difference. Now if you slow the cook down you may could pick up the charcoal flavor. Also something think about is with a filet there isnt a lot of fat dripping on the coals to add flavor where as a ribeye would.

      Usually pecan, hickory, or post oak. I try to stay with a Hardwood and not a fruit.

    Why would you press the steak instead of just flipping it?

      Just to make sure there was good contact on the grates. Helps with seating and even cook. You could flip as much as you like but may not get as good if marks. No right or wrong way.

    I really don't know why folks pour rub all over the meat they're smoking. Salt, Pepper, and maybe a little garlic powder is perfect. But I'm not the foremost expert. I just want to taste the steak. Just my preference.

    Do not...I repeat, do NOT press a quality steak like Filet onto the grate. Oh, feel free to mash a burger or pork chops, but not steak. The weight of the meat will settle it onto the grates without any help from you, plus, every time you press the steak you lose juices...you don't want to do that. Second, unless you prefer the flavor of choice cuts, get a better grade. Having to trim half the fat (hard or otherwise) inflates the cost of the remaining meat to the point where you'd have been better getting a better grade of meat with less waste (and more steak).
