- My mother-n-law’s kadai chicken recipe taste exactly like how we get for weddings. Mom got the recipe from a lady who is wife of the chef who cooks for weddings. And it taste exactly the same. So do try this recipe and am sure you will love it too.

KADAI CHICKEN :
Chicken pieces - 2 kg
Marination :
Ginger paste - 1 tsp
Garlic paste - 1 tbsp
Turmeric powder - 1 tsp
Red chilly powder - 1 tbsp
Salt
Vinegar - 3 tbsp
Oil for frying & gravy - 1/2 cup or as per needed
Onion - 4 medium size sliced
Ginger paste - 1tsp
Garlic paste - 1 tbsp
Capsicum - 2 small (cubed)
Onion - 1 medium (cubed)
Tomato - 4 medium sliced
Salt
Green chillies - 1 tbsp crushed
Chicken masala powder r- 2 big spoons
Black pepper powder - 1.5tsp
Warm water - 1 cup
Kasuri methi / dried fenugreek leaves - 1 tbsp crushed
Shake cashews - a handful and made to paste with some water
Soya sauce - 2 tbsp
Red chilly sauce - 2 tbsp

VEGETABLE BIRIYANI : ( for 1 kg rice )
Jeerakashala or basmati rice - 1 kg
Vegetables cubed-
Carrots - 1 large
Cauliflower - 1 small
Beans - 1 cup chopped
Green peas - 1/2 cup
Oil - 4 tbsp
Onion - 4 medium sliced
Ginger - a small piece crushed
Garlic - 1 whole bulb crushed
Green chillies - 5 crushed
Tomatoes - 4 small sliced
Salt
Turmeric powder - 1/2 tsp
Garam masala powder - 1/2 tsp
Black pepper powder - 1 tsp
Vegtable stock - 1 cup
Curd/yoghurt/thick coconut milk - 1 cup
Vinegar - 2 - 3 tbsp
Coriander leaves - a handful chopped
Garnish :
Fried onion , raisins and cashews

Instead of boiling veggies(for biriyani) try frying the same with ghee or oil. And add those layer wise while keeping for dum. And rest of the masala just as usual for biriyani. This tastes amazing. :)

When u use a non stick tawa you can skip the step of dusting the rice roti with rice flour. Instead put the roti on the tawa directly from the press. This way you can save half the time .please do try
