Yes! I have vacuum sealed bacon and pulled it out of the freezer past a year and it still tasted good! I enjoy buying in bulk and storing/freezing - esp with bacon prices on the rise!
I do have a vacumm sealer and a crud-ton of bacon... saw the prices going up, so I begain purchasing as much as my budget could afford. This is my question... If I "cook" it (like Hormel does with their pre-cooked bacon) would it then be "shelf" stable?
I don't think so. My guess is the Hormel kind has more preservatives in order to make it shelf stable. I think if you cooked the bacon and then canned it - - it would be shelf stable but I have never canned before so I'm just thinking out loud on that.
