Smoked Leg of Lamb with Fried Grit Cakes

- This smoked and braised leg of lamb on the pellet grill was fantastic - and our fried cheese grit cakes were the perfect side dish to go with it! We started by seasoning a leg of lamb with Shake That All-Purpose Seasoning and our homemade Texas Rub (recipe links below). Then, we smoked the lamb leg for about 3 hours at 250 degrees F.
Next, add some red wine, beef consommé, diced carrots, diced onions, diced celery, minced garlic, and rosemary to a large dutch oven. Add the smoked lamb leg to the pot and braise it until tender. But to be honest, the real star of the show was the fried cheesy polenta cakes (or grit cakes).

Based on this comment I suppose you'll understand I'm a west coaster :) I've tried grits one time, in Nashville, and I guess being that I didn't grow up with them I don't understand what all the excitement is around them! And I'm not a lamb junkie either, but maybe I should give it another try. I do love gyros so I guess I need to open my mind a bit. Nice job team Amy and Neal.
to be honent...completely honest..when food is cooked correctly its better...I have had grits and almost threwup...no flavor...thick...no texture...blah blah...I cant say you would like these better...but chicken stock, garlic, 2 cheeses, butter and cream...definitely take it to a whole new level..
On the Lamb...this would NOT be the dish I would recommend if on the fence..
On my other channel ..The Flat Top King, we did lamb gyros...with lamb sirloin...thats something I would 100 recommend....especially that marinade...
I understand what you are saying, but there is a big difference between Grits & Cream of Wheat (which people think are the same thing). Also, a huge difference between Lamb & Mutton, which is what some people in the U.S. have had. Find someone with a Southern background for grits & someone with an India or South African background for you lamb. It will change your flavor opinion for life!…ha ha

I swear by it...a good one to start with is a lamb sirloin...super tender...holds a great marinade...I made that on the flat top king....i tell ya....just works..

I think an idea would be to make enough grits to put on a cookie sheet and then cut out squares so this way it’s not as thick as it was coming out of the bowl. Maybe even use the air fryer. TIT-4-TAT 🤣
Absolutely...looking back I should have done something different..we actually just made this on my other channel The Flat Top King, with Blackened Catfish. I just put away in the refrigerator without even knowing I was going to use it a few days later...
