I live out in Oklahoma and I went on a guide in February with a pro fisherman who got me a 106 pound paddle fish out of Fort Gibson Lake. He also told me to go to Key Stone lake up near Tulsa Oklahoma for some 120+ pounders and a world record fish is loose in there somewhere.

I pan fry fillets in 1/8 to 1/4 inch of oil. You could have filleted off the skin, cut eating size pieces, butterfly them to thin it down if desired and pan fried!
