  • Rosie shows you how to make a pipeable cream cheese frosting.
    More details about buttercream recipes here: www.rosiecakediva.com/2015/sim...
    And for the Cream Cheese video...
    ...here's the recipe;
    Cream Cheese - 225g (8oz or 1 cup)
    Butter (Unsalted) - 115g (4oz or 1 stick)
    Icing Sugar (confectioner's sugar) - 375g (13.25oz or 3 cups)
    Vanilla Extract - 1 Tsp
    Don't forget to refrigerate to get the best consistency!
    Some cream cheese frosting recipes are too sloppy for me. I don't have access to good block cream cheese and by adding the softer cream cheese later it seems to keep the recipe firm enough to pipe nicely.

    This Recipe was FABULOUS! I've tried multiple times to make cream cheese icing. I've finally had to opt for store bought because I could never find a good recipe. I'll never ever, EVER buy store bought cream cheese icing again! Here in the U.S. we measure her recipe like this it: 8 oz Cream Cheese, 1/2 cup unsalted butter, 1-1/2 cup powdered sugar, 1 tsp vanilla. I was able to ice between 18-24 cupcakes with one batch. Even my "none-sugar-liking" hubby LOVED it.

      +ANewMe I used a brand called Hahn's. It's a plain looking box with a little chef on the front. I found it at WalMart. It wasn't watery at all. www.franklinfoods.com/retail-brands/httpwww.franklinfoods.comhahns-cream-cheese-retail

      1 cup of powdered sugar is 125 grams. So, 375 grams should be 3 cups???? Yours turns out pipeable with only 1.5 cups powdered sugar?

      Kiley Electric when you say frost between 18-24, do you mean just slapping it on some cupcakes with a spatula or actually frosting them using a piping bag and tip?

    I have made your recipe for Cream Cheese Buttercream before and I LOVE it. I was looking for something a little lighter and fluffier to use as a filling and crumb coat on a chocolate cake that I was going to cover with milk chocolate ganache. I looked for other whipped cream cheese frosting recipes and none of them seemed like they would be nearly as good as yours. So to achieve that light, fluffy texture I wanted, I followed your recipe then folded in 1 cup whipping cream that I had whipped to stiff peaks. It was wonderful and my husband loved his chocolate-chocolate birthday cake with the whipped cream cheese buttercream filling! Thanks so much!

      Hi i'm making a red velvet tomorrow and to avoid the strong cream cheese flavour i will be adding in some whipped cream as well however i will be using 16oz of cream cheese...you think i'll be fine adding 2 cups whipped cream (mine is 35% fat). I want to be able to pipe flowers on top of the cake...any advice would help! If i don't get a response ill just use a cup or 1.5 cups of whipped cream to be on the safe side and increase sugar accordingly

    I used this recipe to make a rosette cake. Though it was very delicious, it softened fast and made it hard to pipe the flowers, the sides started to melt. I learned to do one later at a time and set the frosting and cake in the fridge to chill for a bit. Cake turned out beautiful.

    to those asking about using granulated sugar, i made this twice, once with powdered sugar and once with granulated. i used a little less granulated sugar and added water instead of milk to think the icing texture. it turned out pretty good! the powdered sugar recipe taste best, but if you only have granulated it works as well.

    Hi Rosie! I absolutely love this video and this frosting looks great, I was wondering however, I made one similar too this that I stuck in the fridge but within the hour the end it started to come down and almost melt, did you find out that was a problem for your cupcakes?

    • @RosieCakeDiva1
      @RosieCakeDiva1  9 років тому

      Hi keepinitclassyftw . Once you have piped it the frosting shouldn't melt as long as you don't keep it in warm conditions. At room temperature mine even crusted....but I don't live in a hot climate. You just have to be prepared to use a fridge or a chiller I'm afraid. It is still a dairy product and will still melt if warmed. You can always add a little more icing sugar to give it a little stiffness. xx

      I know Cakes174 It's really annoying. I used the one from Lidl for this. It's still not a block cheese but I think it's a little less watery than Philadelphia. I still drain as much excess liquid as I can first though.
      This is why I add the cream cheese at the end. I think it stops the mixture from becoming too sloppy. (many people mix it with the butter first!) Do let me know how you go with it won't you? xx
