+Mark “SpeX” Ma Jiro isn't that highly rated by Japanese. He did become famous in teh West because of the film - Which Japanese look at as an interesting Western take on sushi. There are thousands of sushi restaurants in Tokyo alone. Check out tablelog.com, if you look at the sushi category Jiro doesn't rate among the top rated sushiya. He is a top class itamae but in a food city like Tokyo there are many, many others in the same class. Some have run family sushiya for multiple generations. Saito can be very difficult to get a booking but there are others like Sawada (six-seater in Ginza) that are also highly rated but a bit easier to get a spot. In japan I'd go by local recommendations, wouldn't even pay too much attention to the Michelin guide, their Japanese selections are perhaps the least reliable. Most Japanese see the Michelin guide as "japanese food that foreigners like". andy haler's website also has some decent reviews.
Jiro's restaurant (Sukiyabashi Jiro Ginza Honten) has all of a sudden became 4th place for best sushi according to Tabelog users. I have been to both restaurants. Both chefs are extremely talented and they both serve phenomenal sushi. But I have concluded that Saito's sushi tastes better by a small margin because he serves some really delicious otsunami (appetizers) as Jiro is sushi-only, and Saito's sushi has a better balance even though Saito's sushi is a bit small for my liking, but Jiro's vinegar is super strong and sharp but I have actually come to love it. Does Saito serve the best sushi in the world? I'm not in the position to judge that. Until maybe Sugita (rated 2nd sushi place in Tabelog) can change that next spring (Can't wait for my reservation for February at Sugita!)

Saito has been ranked #1 for years now. Jiro's is about #20~25 usually.
