Completely agree! Don't see any reason to change gloves (for hygiene?) when using a butcher's block. Wood is exactly totally out of order because of non-hygienic. Loads of other really bad practices in this video! Why in this video they don't use a thermometer? It is essential! Not measuring vaguely temperature on the wrist. What a bad methods to teach to chocolate apprentices.
okay that was a tiny bit irrelevant though don't you reckon? their tempering came out fine! and they're professionals so they skipped the thermometer but i understand your concerns about that.
