    Best instructions for tempering block dark chocolate I've ever seen or used. 5-Stars! (I used to temper chocolate many years ago, just getting back into it again, grateful for the time you took to make this ideo, THANK YOU, my molds popped out perfect the very first time out).

    Thank you. We've burnt three baking chocolate tablets to cover some pretzels. Hopefully we'll do It right this time.:)

    Very good video but we don’t know the exact temperature to have this chocolate set.

      Milk choc 103 then cool too 86, back up to 96 work with

    Tempering chocolate without a thermometer.... measuring the temperature on your arm...
    I don't trust it. I won't like it.

      you could use a thermometer. they're just used to it.

      you can use a thermometer, but they're teaching how to be able to test without one

    Wooden cutting board on a maple butcher block table.
    Beyond stupid.
    If you don't like getting your hands dirty find another job.

      Completely agree! Don't see any reason to change gloves (for hygiene?) when using a butcher's block. Wood is exactly totally out of order because of non-hygienic.
      Loads of other really bad practices in this video!
      Why in this video they don't use a thermometer? It is essential! Not measuring vaguely temperature on the wrist.
      What a bad methods to teach to chocolate apprentices.

      okay that was a tiny bit irrelevant though don't you reckon? their tempering came out fine! and they're professionals so they skipped the thermometer but i understand your concerns about that.
