    Pico de Gallo, beak of the rooster, how it got the Spanish name no one probably knows. Lyle your rendition of this Mexican standby salsa was spot on and very similar to what is made in Mexico. Nice job !

      When you use "Pico de Gallo", in a sentence, in conversation, or as a phrase, it isn't what you think it is. It is like a hard peck of the rooster. Pendejo!!......... Spanish 101 doesn't work in conversation, don't do that again.

    Can't wait to do this but will do Pineapple as well as Anaheim peppers. 8 romas, 6 jalapenos, 4 anaheim's, two cans pineapple, bunch of cilantro, two onions, lime squeeze, and my own 7 spices. All diced with a grid dicer so it is consistent, Thanks man.

    Great video guys! Thanks for the tips on how to use the salsa. I don't have Jalapeños but will try your tip to use green chilies and green pepper. I'll add the salt bit by bit 'to taste' as you advised.

    The extra salt is cool. It'll help pull the flavors out of the raw veggies. Plus you can also use it as a great marinade.

    I wonder if a little more garlic and less jalapeños would taste good? I'm a wimp when it comes to jalapeños (but I love garlic). I like the type of tomatoes he mentions to use, the Roma, because I find the large tomatoes don't have a lot of flavor. (My family uses Roma tomatoes in their pasta sauce for their flavor.)

    My husband hates cilantro, but I do want to make a close approximation. Would thorny coriander (sawtooth coriander, cilentro, culantro, thai coriander by its other names) be appropriate here? I've never had thorny coriander, but I'm pretty sure parsley isn't a suitable substitute.

    Thank you for going over the basics. I am not a cook and the tips on how to cut the tomato and onion are very useful. Also I think I will add some green onion, I had never thought of that. Did you bake the garlic or just peel and slice it?

    Add vinegar, two to 3 tbsp of Worcestershire sauce, 4 to 5 tbsp of chipotle southwest seasoning. Also a can of delmonte spicy stewed tomatoes diced up. KILLER!

    I literally dislike cutting the tomato.
    But with your help I will definitely cut better.
    I always make a mess. lol
