Do you need to connect the line to an axis? Also, how do you know whether or not to extrapolate?
Tricky question. It depends on the graph you are drawing. Physics graphs are usually based on a mathematical equation, in this case you can extrapolate. However Biology is normally based on more complex interactions and you shouldn't extrapolate. For example yiest activity increases with temperature however if you get it too hot the yiest dies.

without mentioning the most important tool which is linear regression even once this video is quite problematic
I think this is meant to be for school students, so regression isn't really necessary here imo
@emadspeaks is correct. This video is aimed at school students. They are not expected to know about or use linear regression at this stage.

I have an old Minitab (tm) disc I’d rather use for this plot. Quite impressed with the artistic flair in which the graph was hand drawn, though.
